German Chocolate Pecan Pie Bars


German chocolate cake is one of my childhood loves. My mother used to make it from a cake mix with store-bought frosting. And that was just fine with me.

Having an anti-coconut husband has limited my baking with coconuts over the last several years. In the spirit of “absence makes the heart grow fonder,” I think I enjoy all that German chocolate-y goodness even more because I don’t have it very often.

INGREDIENTS
  • 3 cups pecan halves
  • 1 & 3/4 cups all-purpose flour
  • 3/4 cup confectioners’ sugar
  • 3/4 cup cold butter, cubed
  • 1/4 cup unsweetened cocoa powder
  • 1 & 1/2 cups semisweet chocolate chips
  • 3 large eggs
  • 3/4 cup firmly packed light brown sugar
  • 3/4 cup light corn syrup
  • 1/4 cup unsalted butter, melted
  • 1 cup sweetened flaked coconut
INSTRUCTIONS
  1. Preheat oven to 350°F.
  2. Arrange pecans in a single layer of a shallow baking pan. Bake 8-10 minutes or until lightly toasted. Stir halfway through baking.
  3. Line the bottom and sides of a 9″x 13″x 2″ baking pan with aluminum foil, leaving an overhang on two short sides. Grease foil.
  4. Whisk together the flour, confectioners’ sugar, and cocoa. Add the cold butter, and combine with a pastry blender* until the mixture resembles coarse meal. Press the mixture into the bottom and about 3/4-inch up sides of prepared pan.**
  5. Bake the crust for 15 minutes. Remove from oven and immediately sprinkle chocolate chips evenly over crust. Allow to cool on a wire rack at least 30 minutes.

Easy Hershey’s Chocolate Pie


This Super Easy Hershey’s Chocolate Pie is the easiest pie on the planet. With just three ingredients and a couple minutes of time, you can have yourself one amazing pie made.

Quick and easy no bake desserts are the best. My grandmother was always one for whipping up the simplest of recipes that tasted amazing. This is one of those very recipes. I am sure she found it on packaging or something.

INGREDIENTS
  • 6 Hershey Bars
  • 8 oz Frozen Whipped Topping thawed
  • Ready made Cookie Pie Crust
  • Extra Whipped Topping for garnish
INSTRUCTIONS
  1. Melt chocolate bars over low heat or in microwave.
  2. Fold melted chocolate into whipped topping until completely blended.
  3. Pour/spread mixture into crust and refrigerate until set.
  4. Optionally garnish with whipped topping and chocolate pieces.
  5. Chill until ready to serve.

Impossible Peach Blueberry Pie


Impossible Peach Blueberry Pie-homemade buttery pie crust filled with creamy vanilla custard, fresh blueberries and sweet and juicy peaches, topped with whipped cream is perfect summer treat.

This time for my Impossible Peach Blueberry Pie, I used combo of vanilla custard, peaches and blueberries, but I added homemade pie crust as a base for delicious filling, too.

INGREDIENTS

Pie crust:
  • 1 1/3 cups all-purpose flour
  • ¼ teaspoon salt
  • 2 teaspoons sugar
  • ½ cup cold unsalted butter cut in small cubes
Filling:
  • 3-4 medium peaches
  • 1 ¼ cups fresh blueberries
  • 3 eggs
  • ¾ cup+ 2 Tablespoons whole milk
  • ½ cup all-purpose flour
  • ½ cup sugar
  • 2.5 tablespoons unsalted butter-melted and slightly cooled
  • 1 ½ teaspoons vanilla
  • 2 Tablespoons sanding sugar
For serving:
  • Whipped cream or vanilla ice cream
INSTRUCTIONS
  1. To make the crust, in food processor pulse flour with sugar and salt, then add cubed chilled butter and pulse until it resembles coarse meal. If you don’t have the food processor use pastry blender or fork.
  2. Add 2 tablespoons ice water into the mixture and pulse. If necessary, add (one by one) two more tablespoons ice water and pulse. The mixture should hold together when squeezed but do not overmix, it should look crumbly. Shape the dough into a disc and wrap, set in the fridge at least 1 hour (you can store it overnight in the fridge).
  3. Dust the work surface with flour and roll out the dough to make 12-13 inches circle, transfer it in 10 inches pie dish, fold the edges and crimp with your finger. Set in the fridge while prepare the filling.
  4. To make the filling, mix together eggs, milk, flour sugar, melted butter and vanilla. The mixture will be very thin.
