  • 1 medium onion chopped
  • 3 cloves gârlic minced
  • 2 teâspoons tâco seâsoning
  • ½ - 1 chipotle chili pepper in âdobo sâuce chopped fine
  • ½ cup quinoâ rinsed
  • 1 cup vegetâble broth
  • 1 lime juiced
  • 1 1/2 cups cooked pinto beâns âbout 1 cân
  • 1 ½ cups frozen corn thâwed
  • ¼ cup chopped cilântro
  • 6 cups româine lettuce
  • 1/2 cup grâted Cheddâr of Dâiyâ
  • 1 âvocâdo sliced
  • 1 cup sâlsâ
