Awesome! I use all purpose gluten free recipe from Pamela's brand. I add a little extra coconut milk. They are super dense and really tastes. The waffles are a little spongy and taste very good with a hint of lemon (I used YL lemon essential oil). Accompanied with butter tea, this was a nice add-on for brunch.
One of the better Paleo waffles. Would make again. Still looking for a waffle that cooks up crispy on the outside.They came out great! The first grain free waffles I've made that didn't fall apart in the pan! Daughter loved them!
Ingredients
- 3 egg yolks
- 3 egg whites, room temperature
- 1/4 cup coconut milk or milk
- 1 cup almond flour
- ¼ teaspoon salt
- 1 teaspoon vanilla if sweet
- 1 teaspoon maple syrup, optional
- 2 tablespoons coconut oil, melted
- bacon grease or lard or coconut oil for iron
Instructions
- Preheat waffle iron.
- In a medium bowl, whisk egg yolks and milk.
- Add almond flour and salt. Combine until smooth.
