HEALTHY BAKED TURKEY ENCHILADAS

 here’s a recipe for ground turkey enchiladas. I took my famous beef enchilada recipe and substituted the ground beef for lean ground turkey. I even added in some veggies like onions and zucchini. I will throw the veggies into the food processor to make them real fine so it’s the size of ground beef.  You won’t even taste the added zucchini in there because of that, I promise. Use mild or hot flavored enchilada sauce depending on spicy you like your food. Enjoy my healthier take on enchiladas!

This was absolutely amazing and so easy to make! I added mushrooms to the mix as well. The bf gave it a two-thumbs up. Paired it with rice & corn. Super quick and easy. Added cumin and a bay leaf to the turkey while it browned, but otherwise followed the recipe. Came out delicious.

I also added some garlic powder, onion powder, ground cumin and chili powder. Turned out really great!!!

INGREDIENTS

  • 1 1/2 pounds of Jennie- 0 Lean ground turkey breast or fat-free turkey breast
  • 1/2 a small onion, diced
  • 1 small zucchini, diced into fine pieces
  • 1 cup of tomato sauce (optional)
  • 2 cloves of garlic
  • 2 cans of enchilada sauce (hot or mild)
  • 10 6 in flour tortillas
  • 8 oz of low-fat Mexican cheese blend
  • Cooking spray

INSTRUCTIONS

  1. Preheat oven to 375.
  2. Brown ground turkey in a pan until it’s no longer pink. Drain any extra fat. Add in zucchini, onion, garlic and cook for 5 minutes. If you don’t like to cut your vegetables feel free to add them to a food processor  and have that do it for you. In the recipe video I cook the onions and zucchini first and then ADD in the turkey. You can do it either way.
